Broccoli Rice Casserole

Broccoli Rice Casserole


  • 1 14-ounce package (4½ cups) uncooked packaged precooked rice
  • 2 10-ounce packages frozen chopped broccoli
  • 1 cup chopped celery
  • ½ cup chopped onion
  • 4 tablespoons butter or margarine
  • 2 cans condensed cream of mushroom soup
  • 1 cup milk
  • 1 16-ounche jar process American cheese spread


  1. Cook rice according to package directions; set aside.
  2. Cook broccoli according to package directions; drain well.
  3. Cook celery and onion in butter or margarine till tender but not brown.
  4. Combine soup, milk, and cheese; stir in rice, broccoli, and celery mixture.
  5. Turn into two 2-quart casseroles. Bake in 350° oven 40 to 45 minutes or till heated through. Makes 12 to 16 servings.
