Beef Stroganoff Recipe

Yield: 6 servings

Beef Stroganoff

Ingredients

  • 1/2 pound mushrooms (or small can)
  • 1 large onion, sliced
  • 1/4 cup butter, divided
  • 2 pounds round steak or stew meat
  • flour
  • 1 teaspoon salt
  • dash of pepper
  • 1 can condensed beef broth ( or cubes diluted in 2 cups of water)
  • 1 cup sour cream
  • parsley
  • Noodles or rice

Instructions

  1. Saute mushrooms and onions in 2 tablespoons butter
  2. Remove from pan
  3. Remove fat and bone from beef and cube into 2 1/2" x 3/4" wide)
  4. Melt remaining 2 tablespoons butter
  5. Toss meat in flour and brown
  6. Add salt, pepper, and beef broth
  7. Simmer stirring occasionally until meat is tender, approximately 1 hour
  8. Add mushrooms, onion, and sour cream
  9. Heat and serve over 1/3" noodles or rice
  10. Top with parsley, optional
