Recipe Discussion

The beauty of this dish lies in its simplicity. With just a few basic ingredients, you get a full meal with protein, starch, and a creamy sauce. Campbell’s Cream of Mushroom Soup is the star ingredient, adding a rich, savory flavor to the rice and chicken as they bake together. The rice absorbs the soup and water mixture, becoming tender and infused with flavor. Meanwhile, the chicken breasts are cooked to perfection, staying moist and tender throughout the baking process.

Paprika and black pepper season the dish, adding subtle warmth and spice. You can easily adjust these seasonings to suit your personal taste. If you prefer a bit more heat, a dash of cayenne pepper or smoked paprika can add extra flavor.

The one-dish method ensures that all the flavors blend beautifully while also making cleanup a breeze. Since the chicken is baked right on top of the rice mixture, it allows the juices from the chicken to enhance the flavor of the dish even more.

Preparation Tips

  • Use long-grain rice: Make sure to use regular long-grain rice, as other types of rice, such as instant rice, may cook too quickly or unevenly in this dish.
  • Check the chicken: Ensure that the chicken breasts are fully cooked by checking that the internal temperature reaches 165°F before serving.
  • Let it rest: After baking, allow the dish to rest for a few minutes. This will give the rice a chance to absorb any remaining moisture and make serving easier.
  • Customize your seasoning: While paprika and black pepper are classic, you can easily add garlic powder, onion powder, or even Italian herbs for more flavor.

  • Instant-Read Meat Thermometer: Ensures that your chicken is perfectly cooked and safe to eat by reaching the correct internal temperature of 165°F.
  • Rice Storage Container: Keep your rice fresh and ready for use in recipes like this by storing it in an airtight container that preserves its quality.

Serving Suggestions

  • Steamed vegetables: Serve with a side of steamed green beans, broccoli, or carrots to add a fresh, nutritious element to the meal.
  • Side salad: A crisp green salad with a light vinaigrette complements the dish’s richness.
  • Garlic bread: Warm garlic bread or dinner rolls are perfect for soaking up the creamy sauce from the chicken and rice.
  • Roasted potatoes: For a heartier side, roasted potatoes with herbs would add a nice texture contrast to the creamy rice.

It’s perfect for feeding a family with minimal effort and maximum flavor. Whether new to cooking or an experienced home chef, this dish is a reliable and satisfying go-to dinner option.

My mom made this often but made it with one can cream of mushroom soup and one can cream of celery and two soup cans water. She also used a while chicken, cut into pieces.

One of our childhood favorites!

One of my mom's favorites that I still make, have her recipe card, which doubles the ingredients. However, being from New England, the paprika and pepper are replaced by Bell's poultry seasoning and 1/2 c of white wine replacing part of the water (mom was Italian-American).

I have this chicken and rice bake, too. This is the best recipe I have ever tasted. The only thing I added is to sprinkle the chicken with lemon pepper and herb chicken spice. This makes a delish dish!
