Cheese Stuffed Chicken


  • 4 medium chicken breast halves
  • 3/4 cup shredded mozzarella cheese
  • 1/2 cup crumbled peanuts
  • 2 slices bacon, cooked crispy and crumbled
  • salt
  • pepper
  • paprika
  • Bottle Ranch salad dressing


  1. Preheat oven to 350 degrees
  2. Skin chicken
  3. Use sharp knife making pocket cutting horizontally and leave edges intact
  4. Combine cheese, bacon, and peanuts
  5. Place bone side down in 3-quart rectangle dish
  6. Salt and pepper
  7. Bake uncovered for 50-55 minutes until 170 degrees inside
  8. Drizzle with salad dressing before serving
