Zuchinni Pineapple Cake

Zuchinni Pineapple Cake


  • 3 eggs
  • 2 cups sugar
  • 2 tsp vanilla
  • 1 cup cooking oil
  • 2 cups zuchhini peeled & grated
  • 2 cups flour
  • 1 tsp baking powder
  • ½ cup raisins
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 cup nuts
  • 1 cup [crushed] pineapple drained


  1. Beat eggs until fluffy.
  2. Add sugar, vanilla, oil & zucchini.
  3. Blend well.
  4. Add dry ingredients & mix well.
  5. Stir in pineapple, raisins & nut meats.
  6. Bake in large greased & floured loaf pan or two small loaf pans.
  7. Bake at 325° for 1 hr.
