Last Minute Fruit Cake

Last Minute Fruit Cake

Ingredients

  • ½ cup shortening
  • 1 egg
  • 2½ cups Softasilk Cake Flour
  • ½ t. nutmeg
  • ½ t. cinnamon
  • 1 t. soda
  • ¼ cup almonds, cut fine
  • ½ cup raisins
  • ¼ cup dandied cherries fine
  • 1 cup granulated sugar
  • 1 cup unsweetened apple sauce strained
  • ½ t. allspice
  • 1 t. salt
  • ¼ cup water
  • ¼ cup walnuts, fine
  • ¼ cup dates, fine
  • ¼ cup candied pineapple fine
  • ¼ cup lemon rind, fine

Instructions

  1. Cream shortening, add sugar gradually and cream thoroughly.
  2. Blend in well beaten egg.
  3. Add the cooled apple sauce.
  4. Sift [four] once before measuring.
  5. Sift together flour, spices, salt and soda and add alternately with the water to the creamed mixture.
  6. Add fruit and nuts which have been mixed with the last addition of flour.
  7. Pour into greased and floured pan.
  8. Bake 45 min. Temp: 350.
