Raisin Spice Cupcakes Recipe

Raisin Spice Cupcakes
Ingredients
- 1 cup raisins
- 2 cups water
- 1/2 cup shortening
- 1 cup sugar
- 2/4 cup sifted flour
- 1 heaping teaspoon each cloves, nutmeg, cinnamon, and allspice
- 1/4 teaspoon salt
- 1 egg, beaten
- 1/2 cup nuts, chopped
Instructions
- Put one cup raisins into two cups water.
- Boil exactly 10 minutes.
- Add ½ cup shortening and cool.
- Sift together: 1 cup sugar, ¾ cup sifted flour, 1 teaspoon soda, 1 heaping teaspoon EACH cloves, nutmeg, cinnamon and allspice, ¼ teaspoon salt.
- Stir into cool raisin mixture. Add one beaten egg and ½ cup chopped nuts.
- Spoon into cupcake papers in muffin tins and bake 30 to 40 minutes at 375 degrees.
Notes
Ice with powdered sugar or cream cheese frosting, or dust with powdered sugar.
