Mediterranean Cod Skillet

Mediterranean Cod Skillet


  • 2 tbsp. olive oil
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes
  • ½ cup black olives, sliced
  • 1 tbsp. chopped fresh parsley
  • ½ cup dry white wine
  • 1 Lb Trident Premium Cod Fillets


  1. In a large frying pan, heat oil over medium heat.
  2. Saute onions and garlic in olive oil until softened.
  3. Stir in tomatoes, olives, parsley, and wine.
  4. Simmer for 5 minutes.
  5. Place fillets in sauce.
  6. Simmer about 5 more minutes, or until fish turns white.
  7. Serve over rice or pasta.


Makes 4 servings;

Prep time: 10 minutes;

Cook time: 15 minutes;

Ready in: 25 minutes.
