Cranberry Orange Coffee Cake

Cranberry Orange Coffee Cake

Cranberry Orange Coffee Cake (VRP 350)


  • 1/4 cup firmly packed brown sugar
  • ½ cup chopped pecans
  • 1/4 teaspoon ground cinnamon
  • 2 cups SACO Buttermilk Quick Mix (regular or whole wheat)
  • 2 tablespoons sugar
  • 2/3 cup milk
  • 1 egg
  • ½ (14 oz.) jar cranberry-orange relish
  • Powdered Sugar Glaze (recipe follows)


Heat oven to 400°F. Grease 9-inch square pan. Combine brown sugar, pecans and cinnamon, and mix well. Set mixture aside. In a seperate bowl, combine Buttermilk Quick Mix, sugar, milk and egg and beat 30 seconds on medium speed. Pour batter into pan. Sprinkle with prepared pecan mixture, and spoon relish over top.
Bake for 25 minutes or until done. Drizzle Powdered Sugar Glaze over warm cake.
Powdered Sugar Glaze: Combine 1 cup sifted confectioner's sugar, 1 tablespoon milk and ½ teaspoon vanilla and mix until well blended.
