Asparagus in Lemon Butter Recipe

- ½ cup unsalted sweet butter softened
- 1 t. grated lemon peel
- 2 T. fr. lemon juice
- 2 to 2½ lbs. fresh asparagus
- Beat butter, lemon peel & juice in small bowl until light & fluffy.
- Trim ends & peel outer skin from asparagus.
- Simmer asparagus uncovered in salted water to cover in a wide bottomed pan (lg. enough for asparagus to lie flat) over med. heat just until tender, 5 to 8 min., drain.
- To serve, spread asparagus w/ lemon butter.
Tip. * 3 pkg. (10 oz each) frozen asparagus spears can be substituted for fresh asparagus. Cook according to pkg. directions.
