Homestyle Pot Roast
Yield: 8 - 10 servings

Homestyle Pot Roast


  • 4-pound boneless chuck roast
  • 1 large garlic clove, crushed
  • ¼ cup flour
  • 1 teaspoon pepper
  • 2 tablespoons vegetable oil
  • ¼ cup red wine
  • 1 teaspoon coarsely-ground pepper
  • 1 10½-ounce can beef broth, undiluted
  • 1 bay leaf, crushed
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2-3 large onions, quartered
  • 12 baby carrots
  • 12 small new potatoes, unpeeled


  1. Rub roast with crushed garlic.
  2. Combine flour and pepper; dredge meat in flour mixture.
  3. Brown roast on all sides in hot oil in Dutch oven.
  4. Stir together wine and next five ingredients.
  5. Pour over roast.
  6. Cover and bake at 350° for 1 hour.
  7. Add vegetables, cover and bake for 1-2 hours until roast is tender.


Cooking times may vary depending on oven and quality of meat.
