Gabbys Winter Lentil Soup Vintage Recipe Project
Yield: 4 servings

Gabby's Winter Lentil Soup

Cook Time: 1 hour
Total Time: 1 hour

Ingredients

  • 8 cups chicken and turkey broth
  • 1 1/2 cup red lentils
  • 6 cloves garlic
  • 2 medium carrots, sliced
  • 2 medium parsnip, peeled and cut into 1/2" thick slices
  • 2 medium red potatoes
  • 1 medium onion, chopped
  • 1 rib celery, diced
  • 1 can (28 ounces) tomatoes
  • 4 tablespoons cilantro, fresh
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1 bay leaf
  • salt
  • pepper

Instructions

  1. In giant saucepan combine the first three ingredients
  2. Cook and simmer for about 30 minutes
  3. Add all the other ingredients
  4. Bring to a low boil
  5. Cover and simmer for 30 minutes
