Banana Peanut Bread
Yield: 1 loaf

Banana Peanut Bread

Cook Time: 1 hour
Total Time: 1 minute

Ingredients

  • 2/3 cup shortening
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 cups mashed bananas
  • 1 tablespoon lemon juice
  • 2 cups flour, sifted
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup nuts, chopped
  • 1 cup dates, cut into pieces

Instructions

  1. In a large bowl cream the oleo with the sugar
  2. Beat in the eggs one at a time
  3. Blend in the bananas and lemon juice
  4. Sift together the flour, baking soda, salt, and nutmeg
  5. Blend in the banana mixture
  6. Stir in the nuts
  7. Turn into greased and flour 9" x 5" 3" loaf pan
  8. Bake at 325 degrees for 1 hour - 1 hour and 10 minutes or until the cake tester inserted in center comes out clean
  9. Remove from pan
  10. Cool completely on wire rack
  11. Wrap and store and room temperature overnight to mellow flavors
