Frozen Chocolate Peanut Squares
Yield: Serves 12-16.

Frozen Chocolate Peanut Squares

Ingredients

Crust:

  • 3/4 c. margarine (melt 1/4 c. and mix)
  • 2 c. vanilla wafer crumbs
  • Combine and press evenly over bottom of 9”x13” baking dish

Filling:

  • 2 c. confectioner’s sugar
  • 1/2 c. margarine
  • 3 eggs
  • 1 package chocolate bits, melted
  • 1-1/2 c. chopped salted peanuts, divided

Topping:

  • 1/2 gallon vanilla ice cream, slightly softened

Instructions

    1. Beat confectioner’s sugar with margarine.
    2. Beat in eggs, one at a time. Beat in melted chocolate.
    3. Fold in 1 c. salted peanuts.
    4. Spread over crust and freeze for 30 minutes.
    5. Spread ice cream over frozen crust.
    6. Sprinkle with remaining peanuts.
    7. Freeze.

Frozen Chocolate Peanut Squares

¾ cup margarine (divided)

melt ¼ cup margarine and mix with 2 cups (7 ¾ oz.) vanilla wafer crumbs Press evenly over bottom of 9” x 13” dish

2 cups xxxx sugar (confection or powdered sugar) beat with the ½ cup margarine

3 eggs beat into the sugar and margarine mixture one at a time

1 package chocolate bits melted and beat into the above mixture

1 ½ cup salted peanuts, chopped (divided) Fold in 1 cup of above mixture and spread over vanilla wafer crust in dish. Freeze for 30 minutes

½ gallon vanilla ice cream slightly softened spread over frozen mixture above

Sprinkle remaining ½ cup chopped salted peanuts over top of ice cream

Freeze

Serves 12-16

Filling: -2 c. confectioner’s sugar -1/2 c. margarine -3 eggs -1 package chocolate bits, melted -1-1/2 c. chopped salted peanuts, divided

Beat confectioner’s sugar with margarine. Beat in eggs, one at a time. Beat in melted chocolate. Fold in 1 c. salted peanuts. Spread over crust and freeze for 30 minutes.

Topping: -1/2 gallon vanilla ice cream, slightly softened

Spread ice cream over frozen crust. Sprinkle with remaining peanuts. Freeze. Serves 12-16.
