Date and Nut Loaf

Date and Nut Loaf (VRP 034)

Cook Time: 1 hour
Total Time: 1 hour

Ingredients

  • 1 pound walnuts, chopped
  • 1 pound dates, chopped
  • 4 eggs, beaten separately
  • 2 teaspoons baking powder
  • 1 cup sugar
  • 1 teaspoon salt
  • 1 cup flour
  • 1 teaspoon vanilla

Instructions

  1. Mix the nuts, dates, sugar, and salt in a saucepan
  2. Stir in egg yolks with flour and baking powder
  3. Add the vanilla
  4. Fold in the beaten egg whites
  5. Form into 2 loaves in wax paper greased bread pans
  6. Bake at 325 degrees for 1 hour

This date nut loaf recipe is the same one I have from my mother. In fact, the handwriting looks very similar to my mom's! This is an obviously dense, almost energy bar consistency and everyone I have served it to loves it.
