Strawberry Rum Cake
- ½ c. sugar
- 1 c. water
- 1 cup rum
- 2 pt. fresh strawberries
- 1 lb. 1 oz. pound cake mix
- Sweetened whip cream
Dissolve sugar and water over low heat and remove from water and add rum. Reserve 1 cup strawberries. Halve the others and place in rum syrup. Let stand 1 hour. Prepare cake mix as directed and bake 1 hour 325° or until golden brown. Put in ungreased rind mold. Loosen edges with spatula and turn out on serving platter. Drain halved strawberries and reserve syrup and pour syrup over cake slowly until all seeps in fill center with halved strawberries and whip cream and arrange whole strawberries around edge, or cut and serve with whip cream and strawberries.
