Zucchini Squash Recipe

- 3 pounds small zucchini
- 4 shallots
- 1 1/2 teaspoons butter
- White pepper
- Parsley, chopped
- Use 3 lbs of very small zucchini.
- Wash but do not peel.
- Brush with vegetable brush.
- Split lengthwise into 4 pieces then [crosserize] until you have small wedges about 1½ in. long.
- Chop four shallots very fine & saute in 1½ tsp butter for 2 min.
- Add raw zucchini. Add salt & white pepper to taste & simmer for 10 min in covered saute pan.
- Sprinkle with chopped parsley & serve.
