Zucchini Omelet

Vintage Recipe Box 400 comes to us from Chalfont, Bucks County, Pennsylvania.

It is a large white metal box that measures 12” D x 5.5” W x 4” H and has a metal tag that says “American Home Menu Maker.” According to my research, the box was sold in multiple colors for $1 and included 212 “basic recipes” for an additional $.50. (See the image below, which is an order form to purchase the box.)

At this time, we do not know anything about the history of the box.

We do show that this box came to us with another box, but at this time, we are not sure if the same person owned them or if the eBay seller grouped them.

Vintage Cookbooks

Every once and a while, you can find a good cookbook with Vintage Recipes on Amazon. I don’t have any recommendations as I haven’t bought any, as I prefer the handwritten recipes you see on our site.

Zucchini Omelet (VRP 400)

In a skillet, cook together 1 cup unpeeled diced zucchini, ½ cup diced cooked ham, and 1 tablespoon chopped onion for about 3 minutes. Cover the skillet and cook the mixture over low heat for 4 minutes longer. Stir in 2 tablespoons butter and as soon as it is melted add 4 eggs, beaten with 2 tablespoons each of grated Parmesan cheese and water, add salt and pepper to taste. Fold the omelet over from the handle side of the pan and tilt it over a heated plate to form the second fold as it slides onto the plate. Sprinkle the omelet with additional grated Parmesan cheese. Serves 3 or 4.
