Yum Yum Bars (VRP 400)

A chewy dessert bar with graham crackers, marshmallows, coconut, and nuts, topped with melted chocolate and butterscotch frosting. Perfect for parties or potlucks.

Ingredients

  • 2 eggs
  • 1 cup sugar
  • 3/4 cup shortening or margarine

Instructions

    Combine in heavy saucepan that will not burn. Place over low heat. Cook 2 minutes. Remove and cool.
    Mix with:
    2½ cups graham cracker crumbs
    2 cups miniature marshmallows
    ½ cup shredded coconut
    Press into a greased 9 x 13" pan.
    Frost with:
    1 6-oz. pkg. semi-sweet chocolate chips
    1 6-oz. pkg. butterscotch chips
    Melt chocolate and butterscotch chips in double broiler over hot (not boiling) water.
    Spread over bars.
    Refrigerate 30 minutes and cut.
