  • 1 1/2 pounds Navy or Pea Beans
  • Water to cover 5"
  • 4 large yellow onions
  • 1 large clove garlic
  • Butter
  • 6 stems parsley
  • 3/4 teaspoons thyme
  • 1 1/2 large bay leaves
  • 1 carrot (optional)
  • 1/2 lemon
  • 1 pound smoked ham hocks or ______
  • Salt and Pepper
