Vanilla Wafer Banana Pudding


  • Uneeda Bakers Vanilla Wafers
  • ¾ cup sugar
  • ⅓ cup flour
  • 1/8 teaspoon salt
  • 2 eggs
  • 2 cups scalded milk
  • 1 teaspoon vanilla
  • 4 sliced bananas
  • 2 tablespoons sugar


  1. Line pie plate with Vanilla Wafers.
  2. Mix ¾ cup sugar, flour and salt.
  3. Add egg yolks slightly beaten and pour on gradually scalded milk.
  4. Add flavoring and cook fifteen minutes in double boiler, stirring constantly until thickened and then occasionally.
  5. Into the Wafer-lined plate put a layer of bananas.
  6. Pour custard over all.
  7. Whip egg whites stiff, add 2 tbsps. sugar and spread mixture over top of custard.
  8. Place in a slow oven (325° F) for 15 minutes to brown meringue.
