Unbelievable Lemon Pie

Unbelievable Lemon Pie


  • 1 can (14 oz) sweetened condensed milk
  • 1 cup water
  • ½ cup lemon juice
  • ½ cup biscuit baking mix
  • 3 eggs
  • ¼ cup butter or margarine, softened
  • 1½ teaspoons vanilla extract
  • 1 cup flaked coconut


  1. Preheat oven to 350°.
  2. In blender container, combine all ingredients except coconut.
  3. Blend on low for 3 minutes
  4. Pour mixture into greased 10" pie plate; let stand 5 minutes
  5. Sprinkle coconut over top.
  6. Bake 35 to 40 min or until knife, inserted near edges comes out clean.
  7. Cool slightly; serve warm or cool.
  8. Refrigerate leftovers.
