Yield: 6 servings

Tropical Sweet Potatoes

Cook Time: 40 minutes
Total Time: 40 minutes


  • 4 cups mashed sweet potatoes
  • ¾ cup crushed drained pineapple
  • 3 T. butter
  • 1 t. salt
  • ¼ cup brown sugar
  • 1/8 t. cinnamon
  • 1 T. butter
  • ½ cup coconut
  • ¼ cup drained pineapple


  1. Mix potatoes and pineapple
  2. Beat in butter, salt, brown sugar & cinnamon
  3. Heap in 1½ quart casserole.
  4. Melt the second 1 T. butter and add coconut & ¼ cup pineapple.
  5. Sprinkle over top & bake 375 for 40".
