Swiss Style Potato Soup Recipe

- 4-6 small potatoes
- 1 tablespoon butter
- 4 fresh green onions, sliced
- 2 sprigs parsley
- 1 cup Swiss cheese, cubed
- 1 can (13 oz.) evaporated milk
- ¼ teaspoon salt
- Boil potatoes until tender.
- Drain, reserving ½ cup water.
- Peel and cube.
- Saute onions in butter.
- Combine potatoes, onions, parsley, cheese, milk, water and salt. Microwave on HIGH for 8 minutes.
- Serve or freeze. .
