Sweet Potato Muffins

Sweet Potato Muffins (VRP 200)


  • 1 3/4 cups sifted all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 large eggs, lightly beaten
  • 3/4 cup milk
  • 1 1/4 cups mashed sweet potatoes
  • 1/4 cup I Can't Believe It's Not Butter!, softened
  • 2 tablespoons brown sugar, packed
  • ½ teaspoon cinnamon
  • ½ cup coarsely chopped walnuts


    1. Heat oven to 425°.
    2. In medium bowl sift together flour, baking powder and salt.
    3. In another bowl, mix remaining ingredients until well blended.
    4. Add to dry ingredients, mixing just until dry ingredients are moistened.
    5. Lightly coat muffin tins with I Can't Believe It's Not Butter! Fill about 3/4 full with batter.
    6. Bake 20 to 25 minutes or until browned.
