Susan's Refrigerator Cookies
Ingredients
- 3 cups sifted all purpose flour
- 1 teaspoon soda
- 2 teaspoons salt
- 1 cup shortening
- 2 cups granulated sugar
- 2 eggs
- Vanilla
- 1 cup walnuts or pecans
Instructions
- Sift 3 cups sifted all purpose flour with 1 teaspoon soda and 2 teaspoons salt
- Beat 1 cup of shortening until smooth and add 2 cups granulated sugar
- Beat again
- Add 2 unbeaten eggs, beat unitl blended
- Add vanilla flavoring
- Add flour mixture a little at a time
- cup coarsely chopped walnuts or pecans
- Shape in roll 1" x 2" roll or 2 x 1 1/2" roll
- Wrap in waxed paper and chill
- Slice 1/8" or 1/4" thick
- Cookies are 1" apart
- Bake in moderate oven at 375 degrees for 10 - 13 minutes until light brown

My Mom cut this recipe out of Good Housekeeping magazine in approx. 1959 or so. The magazine routinely featured " Susan" cooking or baking. This recipe is a winner. I still bake these cookies and always get rave reviews! And my recipe calls for 375 degrees. .

I too have the same recipe my grandmother passed along to me. But mine says bake at 300 degrees for 12-14 minutes.
