Stuffed Tomato Salad
Ingredients
- 4 tomatoes
- 3/4 teaspoon salt
- 1 teaspoon sugar
- 1/2 teaspoon dry mustard
- pinch of pepper
- 3 tablespoon PET milk
- 1 tablespoon vinegar
- 3/4 shredded cabbage
- 3/4 cup shredded carrots
- 1/4 cup finely cut green pepper
Instructions
- Removed stem from tomatoes
- Remove the insides of the tomatoes and dice / drain the tomato cups
- Mix salt, sugar, dry mustard, and pepper
- Sprinkle the inside of the tomatoes with 3/4 teaspoon of the salt mix
- Chill tomatoes until ready to use
- Stir gradually into the remaining salt mix the PET milk and vinegar
- Beat vigorously until well blended
- Chill mixture
- Mix diced tomatoes, cabbage, carrots, and green pepper
- Add chilled dressing and ix well
- Fill tomatoes with salad mix
- Serve on lettuce

- The author writes at the bottom of the recipe card “May use spinach instead of cabbage, celery for the carrots.”
