Stuffed Tomato Salad

Stuffed Tomato Salad

Ingredients

  • 4 tomatoes
  • 3/4 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 teaspoon dry mustard
  • pinch of pepper
  • 3 tablespoon PET milk
  • 1 tablespoon vinegar
  • 3/4 shredded cabbage
  • 3/4 cup shredded carrots
  • 1/4 cup finely cut green pepper

Instructions

  1. Removed stem from tomatoes
  2. Remove the insides of the tomatoes and dice / drain the tomato cups
  3. Mix salt, sugar, dry mustard, and pepper
  4. Sprinkle the inside of the tomatoes with 3/4 teaspoon of the salt mix
  5. Chill tomatoes until ready to use
  6. Stir gradually into the remaining salt mix the PET milk and vinegar
  7. Beat vigorously until well blended
  8. Chill mixture
  9. Mix diced tomatoes, cabbage, carrots, and green pepper
  10. Add chilled dressing and ix well
  11. Fill tomatoes with salad mix
  12. Serve on lettuce

COOK’S NOTES
  • The author writes at the bottom of the recipe card “May use spinach instead of cabbage, celery for the carrots.”
