Strawberry Meringue Cake

Strawberry Meringue Cake

  • 3/4 cup granulated sugar
  • 1/4 teaspoon cream of tartar
  • Pinch of salt
  • 4 egg whites
  • 1 cup strawberry preserves
  • 1 cup heavy cream, whipped
  • 3 6" circles cut from brown paper (parchment)


  1. Preheat oven to 250 degrees
  2. Sift dry ingredients (sugar, cream of tartar, salt)
  3. Beat egg whites until very stiff but not dry
  4. Gradually beat in sugar mixture
  5. Beat until meringue forms stiff glossy peaks
  6. Place circles on baking sheet
  7. Smoothly spread 1/3 of the meringue on each circle
  8. Bake for 1 hour at 250 degrees
  9. Turn off oven and leave meringues in closed oven for 1 more hour
  10. Fold 1/2 cup strawberry preserves into whipped cream
  11. Spread cream in between meringue layers and around side of cake
  12. Cover top with last of strawberry preserves
  13. Chill
