Starlight Mint Surprise History

In 1949, Laura Rott from Naperville, Illinois was the first runner-up in Pillsbury’s first Grand National Recipe and Baking Contest (it would later be named the Pillsbury Bake-Off Contest).

Rott’s winning recipe was a product of her upbringing. Growing up on a farm in Naperville with nine siblings, she was always taught to not waste anything. So, when no one in her family was eating some chocolate mint wafers in the house, Rott came up with a new way to use them, in a cookie. 

Her recipe for that cookie turned out to be surprisingly delicious.  

At the first-ever Bake-Off® Contest awards ceremony, an excited Laura Rott received a $ 10,000-second prize for her cookies with the surprise of a chocolate mint hidden inside. With some time to spare before her trip back home, Laura tucked the check into her purse and set out to see more of the sights of New York City. Unfortunately, she had another surprise: An enterprising pickpocket managed to purloin her prize check! No harm, though, because Bake-Off® Contest officials canceled her original check and re-issued a new one. What’s no surprise is that Laura’s cookies have become a classic.

Starlight Mint Surprise

Ingredients

  • 3 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butter
  • 1/2 cup brown sugar
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • Mint chips
  • Walnut halves

Instructions

  1. Sift together the flour, baking soda, and salt
  2. Cream together the butter, brown sugar, and granulated sugar
  3. Add the eggs and beat until fluffy
  4. Add the vanilla and mix well
  5. Fold in the sifted flour mixture
  6. Stir in the mint chocolate chips
  7. Place on ungreased cookie sheet 2" apart
  8. Top with walnut halves
