Spice Cake With Baked Frosting

A Short History

Spice cakes have been a beloved dessert for centuries, with their origins tracing back to ancient civilizations that cherished spices for both their flavor and supposed medicinal properties. The addition of a baked frosting is a nod to more modern baking techniques, providing a delightful contrast in textures from the soft cake to the crispy topping. This recipe combines these elements to create a cake that is both nostalgic and refreshingly new.

Tips for Making Spice Cake with Baked Frosting

  • Creaming Technique: Starting with creaming the shortening and brown sugar ensures a light and fluffy base, crucial for a tender cake crumb.
  • Eggs: Incorporating a whole egg plus an additional yolk adds richness to the batter, enhancing the moistness of the cake.
  • Sifting Dry Ingredients: Sifting together flour, spices, baking soda, and baking powder not only ensures even distribution but also aerates the mix, contributing to a finer cake texture.
  • Sour Milk: The use of sour milk introduces a subtle tanginess that balances the sweetness of the cake. If you don’t have sour milk, you can easily make some by adding a tablespoon of vinegar or lemon juice to regular milk and letting it sit for a few minutes.
  • Frosting Preparation: Beating the egg white to soft peaks before gradually adding brown sugar creates a meringue-like frosting that bakes to a light crispness, enhanced by the addition of nuts for texture and flavor.
  • Baking: Spreading the frosting over the unbaked cake batter allows it to bake simultaneously, fusing the two components into a harmonious dessert.
