Salted Peanut Chews Recipe

Salted Peanut Chews
Yield: 36 bars

Salted Peanut Chews



  • 1 package Pillsbury yellow cake mix
  • 1/3 cup oleo or butter, softened
  • 1 egg
  • 3 cups miniature marshmallows


  • 2/3 cup corn syrup
  • 1/4 cup oleo
  • 2 teaspoons vanilla
  • 12 ounce package (2 cups) peanut butter chips
  • 2 cup rice cereal
  • 2 cups salted peanuts


  1. Preheat oven to 350 degrees
  2. In a large bowl combine all the base ingredients except for marshmallows at low speed until crumbly
  3. Press into bottom of ungreased 13" x 9" pan
  4. Bake at 350 degrees for 12 - 15 minutes or until golden brown
  5. Remove from oven and immediately sprinkle with marshmallows
  6. Return to oven 1 - 2 minutes or until marshmallows just begin to puff
  7. Cool while preparing topping
  8. In a large saucepan heat corn syrup, oleo, vanilla, and peanut butter chips just until chips are melted and mixture is smooth stirring constantly
  9. Remove from heat and stir in cereal and nuts
  10. Immediately spoon warm topping over marshmallows
  11. Spread to cover
  12. Chill
  13. Cut into bars and store covered
