Homemade Rolls

Food History

Rolls have long been a staple in many cultures, with their roots tracing back to ancient bread-making techniques. Originally, most bread was flat, as leavening agents like yeast were not widely used. Over time, as yeast became more commonly used in baking, soft, risen rolls emerged, becoming popular across Europe, especially in France and England.

During the 18th and 19th centuries, dinner rolls became a common addition to meals, particularly in Europe and the United States. By the time of the American frontier, recipes like this one were often passed down through families and shared within communities. Baking methods, such as using yeast to leaven dough, became more refined, producing the tender, fluffy rolls we know today. This recipe reflects those historical techniques, offering a nod to the past while remaining timeless in its simplicity.

Yeast is the critical ingredient in this recipe, making the dough rise and giving the rolls their fluffy texture. Yeast-based breads have been around for millennia, with yeast first used by the Egyptians around 4,000 B.C. By the 19th century, commercially available yeast made baking much easier for home cooks, especially in America. Using yeast, sugar, and fat like shortening or butter is typical in roll recipes, as it creates soft, flavorful bread.

Timeline

  • 4,000 B.C.: Yeast was first used by the Egyptians to leaven bread.
  • 1700s: Dinner rolls became a popular side dish in Europe and the U.S.
  • 19th century: Commercial yeast became widely available.
  • Mid-20th century: Pillsbury flour, mentioned in this recipe, became a household name in baking.

Recipe Discussion

This classic roll recipe is straightforward, focusing on creating soft, fluffy rolls that pair well with any meal. The combination of warm milk, sugar, and shortening provides a tender texture, while the yeast ensures the rolls rise beautifully. Scalding the milk helps dissolve the sugar and salt while also making sure the dough has a smoother consistency.

Using warm water to activate the yeast is crucial for the rise, as it creates a light, airy dough. If the water is too hot, it can kill the yeast, but if it’s too cold, the yeast won’t activate properly. The dough is rolled and cut into circles, and by folding each circle, you get that classic layered roll, perfect for pulling apart when fresh out of the oven.

Pillsbury flour, as mentioned in the recipe, adds a familiar consistency to the dough. It’s known for its high quality, which helps create a soft, pliable dough that rises well. The shortening (Crisco) keeps the rolls moist and gives them a rich flavor without being too heavy. After a few hours of rising and resting, these rolls bake up golden and fluffy in just 10 to 15 minutes at 350°F.

Preparation Tips

  • Scalding the milk: Be sure to let the milk cool after scalding, as adding hot milk to the yeast mixture can kill the yeast.
  • Activating the yeast: Use water that is around 110°F to 115°F. If you don’t have a thermometer, the water should feel warm but not hot to the touch.
  • Dough consistency: If the dough feels too sticky when kneading, you can add a bit more flour, a tablespoon at a time, until it is soft and no longer sticking to your hands.
  • Rolling the dough: Roll the dough to about 1/2 inch thick, ensuring an even thickness for uniform baking.
  • Resting time: The dough needs time to rise in a warm place. If your kitchen is cool, you can set the dough in an oven that is turned off but has a light on, providing a bit of warmth for the dough to rise.
  • Bake time: Watch the rolls closely as they bake. You want them to be golden brown but not overly dark, which can dry them out.
