Recipe Discussion

Rocky Road Cookies are a dessert that appeals to almost everyone. The chocolate morsels melt into the cookie dough, creating a fudgy texture, while the chopped nuts add crunch. Marshmallows are the star ingredient, becoming soft and gooey in the baking process. These cookies are reminiscent of brownies, but the addition of marshmallows and nuts gives them a playful, nostalgic twist. Similar to s’mores cookies, Rocky Road Cookies deliver a blend of chewy, chocolatey, and nutty flavors, but with a signature marshmallow surprise at the center.

Preparation Tips

  • Use mini marshmallows for easy handling and better distribution in the cookies.
  • Allow the melted chocolate and butter mixture to cool slightly before adding it to the dough. This helps prevent the eggs from cooking prematurely.
  • For even baking, ensure the cookies are spaced about 2 inches apart on the sheet.
  • Store the cookies in an airtight container to keep them soft and chewy for up to a week.
  • If you prefer a nuttier flavor, toast the chopped nuts before adding them to the dough.
