Rhubarb Strudel

Cook Time: 45 minutes
Total Time: 45 minutes

Ingredients

Bottom dough:

  • ½ cup margarine
  • ½ cup sugar
  • 2 eggs, 1 whole and other divided
  • 2 cups flour
  • ½ tsp. salt
  • ½ tsp. baking powder
  • 2 Tbsp. milk
  • 1 tsp. vanilla

Filling:

  • 3-1 cups fresh rhubarb
  • 1 3-ounce package strawberry jello
  • 1½ cup sugar
  • 1 cup flour
  • ½ cup margarine

Instructions

  1. Cream shortening and sugar. Add one egg yolk and one egg.
  2. Add flour and dry ingredients, alternating with milk. Add vanilla.
  3. Press into 9-by-12 baking pan. Beat remaining egg white and spread over dough.
  4. Cut rhubarb generously over dough. Sprinkle jello on top.
  5. Mix sugar, flour and shortening and spread over top.
  6. Bake 45 minutes at 350 degrees. Serve warm with milk, whipped topping or ice cream.
