Rhubarb Strudel Recipe

Rhubarb Strudel
Ingredients
Bottom dough:
- ½ cup margarine
- ½ cup sugar
- 2 eggs, 1 whole and other divided
- 2 cups flour
- ½ tsp. salt
- ½ tsp. baking powder
- 2 Tbsp. milk
- 1 tsp. vanilla
Filling:
- 3-1 cups fresh rhubarb
- 1 3-ounce package strawberry jello
- 1½ cup sugar
- 1 cup flour
- ½ cup margarine
Instructions
- Cream shortening and sugar. Add one egg yolk and one egg.
- Add flour and dry ingredients, alternating with milk. Add vanilla.
- Press into 9-by-12 baking pan. Beat remaining egg white and spread over dough.
- Cut rhubarb generously over dough. Sprinkle jello on top.
- Mix sugar, flour and shortening and spread over top.
- Bake 45 minutes at 350 degrees. Serve warm with milk, whipped topping or ice cream.
