Rhubarb Crunch Recipe

- 1 cup sifted flour
- 3/4 cup oatmeal (uncooked)
- 1 cup brown sugar
- 1/2 cup butter, melted
- 1 teaspoon cinnamon or 1/2 teaspoon nutmeg
- 4 cups rhubarb, diced
- 1 cup sugar
- 2 tablespoons cornstarch
- 1 cup water
- 1 teaspoon vanilla
- Mix the flour, oatmeal, brown sugar, butter, and spice
- Press half of the mixture into a pan
- Add the rhubarb
- In a saucepan add the sugar, cornstarch, water, and vanilla
- Cook until thick and pour over the rhubarb
- Top with the remaining oatmeal crumbs
- Bake at 1 hour at 350 degrees
