Rhubarb Cake 1

Rhubarb Cake

Ingredients

  • 2⅓ cup flour
  • 1 teasp salt
  • 1 teasp baking soda
  • 1½ cups brown sugar
  • ¼ cup oleo
  • 1 cup sour cream or buttermilk
  • 1 egg beaten
  • 1 teasp vanilla
  • 2½-4 cups rhubarb
  • ¾ cup sugar
  • ½ teasp nutmeg

Instructions

  1. Mix all ingred. together
  2. Bake in 9x13 greased pan at 350° for 45 minutes
  3. Sprinkle on top before baking with ¼ cup gran sugar, chopped nuts and cinnamon (see back.)
  4. For topping use Helen [Hines'] recipe for coffee cake - mix ½ stick of oleo, 1 cup flour, ½ cup brown sugar, ¼ cup gran sugar.
  5. Use ½ cup of this mixture and add ¼ cup chopped nuts to sprinkle on top.
