Raspberry Bombe


  • 1 1/2 quarts of raspberry sherbet
  • 1 cup heavy cream
  • 3/4 cup confectioners sugar
  • 2 teaspoon vanilla
  • 1 tablespoon Cointreau Grand Mariner liqueur
  • Raspberries


  1. Chill a 2 quart mold and lone quickly with sherbet
  2. Put into freezer
  3. Whip cream until stiff and add sugar, vanilla, and liqueur
  4. Force enough berries through a sieve to make 1 cup and add to cream
  5. Fill center of mold with cream mixture and freeze until firm
  6. Unmold on serving plate
  7. Decorate with fresh raspberries and whipped cream as desired
  8. Vanilla ice cream can be substituted for the cream mixture
