Potato Soup Recipe

Potato Soup
Ingredients
- 3 T butter or margarine
- 1 cup dried onions
- 3 cups cube dpotatoes
- 1 grated carrot
- 3 cups water
- 2 t. salt
- ½ t black pepper
- 1 t. caraway seed (optional)
- 2 T. Farina
- 3 cups milk
- 3 T minced parsley
- [12] C. sour cream
Instructions
- Melt butter in a large heavy saucepan [and] brown onions.
- Add carrot, water, salt, pepper and caraway seeds.
- Bring to a boil, add potatoes, return to boil.
- Stir in farina.
- Cook over low heat 10-15 min. until potatoes begin to soften.
- Stir in milk an dparsley - return to boiling point and turn off heat.
- We usually serve soup and let those who want sour cream add it themselves.
Notes
I use dried parsley - and I also use 2 carrots. It says caraway seed is optional, but I think it is much better with it.
