Yield: Serves 6-8

Potato Soup


  • 3 T butter or margarine
  • 1 cup dried onions
  • 3 cups cube dpotatoes
  • 1 grated carrot
  • 3 cups water
  • 2 t. salt
  • ½ t black pepper
  • 1 t. caraway seed (optional)
  • 2 T. Farina
  • 3 cups milk
  • 3 T minced parsley
  • [12] C. sour cream


  1. Melt butter in a large heavy saucepan [and] brown onions.
  2. Add carrot, water, salt, pepper and caraway seeds.
  3. Bring to a boil, add potatoes, return to boil.
  4. Stir in farina.
  5. Cook over low heat 10-15 min. until potatoes begin to soften.
  6. Stir in milk an dparsley - return to boiling point and turn off heat.
  7. We usually serve soup and let those who want sour cream add it themselves.


I use dried parsley - and I also use 2 carrots. It says caraway seed is optional, but I think it is much better with it.
