Potato Salad Recipe

Potato Salad Recipe (VRP 004)
Ingredients
- 8 med. unpared potatoes (6 cups cubed cooked)
- ½ tsp salt (or salt to taste) & pepper
- 1 cup chopped celery (little chopped green pepper also = optional)
- ¼ cup minced onion (sugar them! = let set - then pour into potatoes)
- ¼ cup pickle relish
- ¼ cup Fr. dressing (& tbsp. prepared mustard)
- 4 hard cooked eggs - diced. (boil another one for trim)
Instructions
- Add - & toss gently
- Chill about 1 hour then:
- Fold in ½ to ¾ cup salad dressing or mayonnaise.
- Trim with more hard-cooked egg slices.
