Potato Salad 2

Potato Salad Recipe (VRP 004)


  • 8 med. unpared potatoes (6 cups cubed cooked)
  • ½ tsp salt (or salt to taste) & pepper
  • 1 cup chopped celery (little chopped green pepper also = optional)
  • ¼ cup minced onion (sugar them! = let set - then pour into potatoes)
  • ¼ cup pickle relish
  • ¼ cup Fr. dressing (& tbsp. prepared mustard)
  • 4 hard cooked eggs - diced. (boil another one for trim)


  1. Add - & toss gently
  2. Chill about 1 hour then:
  3. Fold in ½ to ¾ cup salad dressing or mayonnaise.
  4. Trim with more hard-cooked egg slices.
