Potato Ham Scallop

Ingredients

  • 2 cups cubed fully cooked ham
  • 6 to 8 medium potatoes, peeled and thinly sliced (6 cups)
  • ¼ cup finely chopped onion
  • ½ cups all-purpose flour
  • 2 cups milk
  • 3 tablespoons fine dry bread crumbs
  • 1 tablespoon butter or margarine, melted
  • 2 tablespoons finely snipped parsley

Instructions

  1. Place half the ham in a 2-quart casserole.
  2. Cover with half the potatoes and half the onion.
  3. Sift half the flour over; season with salt and pepper.
  4. Repeat layering ham, potatoes, and onion.
  5. Season with additional salt and pepper. Sift remaining flour atop.
  6. Pour milk over all.
  7. Bake, covered, at 350° till potatoes are nearly tender, 1 to 1¼ hours.
  8. Uncover.
  9. Combine bread crumbs and melted butter; sprinkle atop casserole.
  10. Top with parsley.
  11. Bake 15 minutes longer.
