Potato Almond Patties

Potato Almond Patties


  • 1 cup water
  • ⅓ cup milk
  • 2 tablespoons margarine or butter
  • ½ teaspoon salt
  • 1⅓ cups instant mashed potatoes (dry)
  • ⅓ cup chopped green onions (with tops)
  • 2 tablespoons finely chopped almond
  • 2 tablespoons all-purpose flour

Have ready at serving time:

  • 2 tablespoons margarine or butter
  • 2 tablespoons vegetable oil


  1. Heat water, milk, margarine and salt to boiling in 2-quart saucepan; remove from heat.
  2. Stir in potatoes and onions.
  3. Whip with fork until thick; cool.
  4. Shape potato mixture into 6 patties, each about 3 inches in diameter.
  5. Mix almonds and flour; coat each patty with almond mixture (To serve immediately, continue as directed in TO SERVE.)
  6. Cover and refrigerate no longer than 48 hours.
  7. TO SERVE: Heat margarine and oil in 10-inch skillet until hot.
  8. Cook Potato-Almond Patties, turning once, until golden brown and hot, about 3 minutes on each side.
  9. Serve with dairy sour cream if desired.


6 servings.
