Plain Cake

The Humble Beginnings of Plain Cake

Plain cakes, like this one, have been a staple in home kitchens for generations. Originally, they were made from the most basic ingredients—flour, sugar, eggs, and a little fat—long before the invention of pre-packaged cake mixes. The history of cake itself dates back to ancient times, with early versions being more bread-like and less sweet. It wasn’t until the 19th century, with the advent of baking powder, that cakes became the light, fluffy confections we know today. This plain cake recipe is a nod to those early days, offering a straightforward, timeless dessert that is as versatile as it is easy to make.

The Evolution of the Plain Cake Recipe

Plain cakes have been adapted to suit different tastes and available ingredients. In the early 20th century, cakes like this one became more accessible to the average home cook, thanks to the availability of affordable ingredients like baking powder and vanilla extract. This recipe reflects the simplicity of that era, relying on pantry staples to create a delicious dessert. The timeline of this plain cake recipe might not be as dramatic as some culinary histories, but its enduring popularity speaks volumes. From the Great Depression to modern-day kitchens, this cake has stood the test of time.

Breaking Down the Ingredients

This plain cake recipe is a wonderful blend of basic ingredients that work together to create a tender and flavorful cake. The shortening provides moisture and a tender crumb, while sugar adds just the right amount of sweetness. The egg helps bind everything together, adding richness to the cake. Milk gives the cake its moisture, ensuring a soft texture. The combination of flour, baking powder, and salt provides the structure and leavening needed to make the cake rise and stay fluffy. Finally, the choice between vanilla or lemon extract allows you to customize the flavor to your liking, making this cake a versatile option for any occasion.

Tips for Perfect Preparation

To ensure your cake turns out perfectly every time, there are a few tips to keep in mind. First, make sure your ingredients, especially the shortening and egg, are at room temperature before you begin. This will help them blend more easily, resulting in a smoother batter. When creaming the shortening and sugar, take your time—this step is crucial for incorporating air into the mixture, which will help the cake rise properly. Sift your dry ingredients to remove any lumps and ensure even distribution of the baking powder and salt. Finally, when blending the wet and dry ingredients, be careful not to overmix, as this can result in a tough cake.

I think it needs more sugar. Are you sure that was only 1 cup?
