Pinwheel Cookies Recipe

Pinwheel Cookies
Ingredients
Dough
- 1/2 cup butter
- 1/2 cup light brown sugar
- 1/2 cup white sugar
- 1 egg, well beaten
- 2 cups flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Filling
- 1/2 pound dates, finely chopped
- 1/2 cup water
- 1/2 cup sugar
- 1/2 cup walnuts, chopped
Instructions
!Dough
Cream together the butter and sugars
Add the egg and mix well
Sift together the flour, baking soda, and baking powder
Fold into the creamed mixture
Turn out on floured board
Roll about 1/2" thick
Spread filling over the dough and roll up
Put in wax paper and put in refrigerator overnight
Slice thin
Bake at 400 degrees for 12 minutes
!Filling
Cook together the dates, sugar, and walnut
Boil for 5 minutes and add the nuts
