Pickled Beets Recipe

- 2 cups sugar
- 2 cups water
- 2 cups vinegar (4 or 5__)
- 1 T lemon juice
- 1 tsp. cloves (gr)
- 1 tsp. allspice (gr)
- 1 T. cinnamon (gr)
- Select (24?) small, young beets, cook until tender, dip into cold water. Peel off skins.
- Make the following syrup: 2 cups sugar, 2 cups water, 2 cups vinegar (4 or 5 __), 1 T lemon juice, 1 tsp. cloves (gr), 1 tsp. allspice (gr), 1 T. cinnamon (gr)
- Pour over beets & simmer 15 min. Pack into sterilized jars & seal.
