Pecan Meringue Pie Recipe

Pecan Meringue Pie

Pecan Meringue Pie

Cook Time: 30 minutes
Additional Time: 2 hours
Total Time: 2 hours 30 minutes


  • 3 egg whites
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla
  • 1 cup sugar
  • 3/4 cup pecans, chopped
  • 14 Ritz crackers, crushed fine
  • 1/2 pint whipped cream


  1. Beat egg whites until thick and foamy
  2. Add the baking powder and vanilla
  3. Add the sugar gradually then fold in the Ritz crackers and nuts
  4. Pour mixture into greased and floured 9" pie pan
  5. Bake at 30 minutes at 325 degrees for 30 minutes
  6. Cool and chill for 2 - 4 hours
  7. Fill in where mixture has fallen and cover with whipped cream
  8. Decorate with pecan halves before serving
