Pecan Delight

Pecan Delight

Ingredients

  • 2½ dozen vanilla wafers
  • 1 stick (¼-lb.) butter or margarine
  • 3 egg yolks
  • 2 cups Imperial 10X Powdered Sugar
  • 3 egg whites, stiffly beaten
  • 1 cup chopped pecans
  • 1 teaspoon vanilla

Instructions

  1. Roll wafers fine and cover bottom of 8-inch square pan with part of crumbs.
  2. Cream butter and add yolks, one at a time, beating constantly.
  3. Add powdered sugar and vanilla; cream well.
  4. Fold in egg whites.
  5. Then add pecans.
  6. Pour layer or mixture on crumbs in pan, then add more crumbs and more mixture alternately until pan is filled.
  7. Set in refrigerator to harden at least 12 hours.

Notes

Makes 10 servings.
