Peanut Butter Oatmeal Cookies Recipe

- 1 cup enriched flour
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1/2 cup shortening
- 1/3 cup brown sugar
- 1/2 cup peanut butter
- 1/2 cup dark corn syrup (or substitute honey or brown sugar)
- 1 1/2 cup quick oats
- 1 egg
- 1 teaspoon vanilla
- Sift flour, salt, baking powder into mixing bowl
- Add sugar, shortening, peanut butter, egg, vanilla, and 1/2 corn syrup
- Beat until smooth
- Fold in oats and remaining syrup
- Drop from teaspoon on greased cookie sheet
- Bake in a moderate oven (375 degrees) for 10 - 12 minutes
