Peach Basket Turnover

Ingredients
  • 2 eggs, separated
  • 1 cup sugar
  • 1/3 cup hot water
  • 1 cup flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 1 cup brown sugar
  • 2 tablespoons butter
  • 1 large can sliced peaches, drained
Instructions
  1. Beat egg yolks until lemon colored
  2. Add 1/2 cup sugar and beat light and fluffy
  3. Add hot water gradually
  4. Add balance of sugar
  5. Beat for 5 minutes
  6. Fold in stiffly beaten egg white
  7. Mix and sift dry ingredients
  8. Mix in salt
  9. Cream butter, brown sugar, and peaches
  10. Add vanilla and peaches
  11. Pour into greased baking dish and pour cake batter over top
  12. Bake at 400 degrees for 45 minutes
  13. Leave in pan 5 minutes
  14. Serve with cream
