Palacsinta Recipe

  • 2 cup flour, sifted
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 4 eggs, well beaten
  • 2 cups milk
  • Butter
  • Powdered sugar
  • Sour cream
  • Preserves

Cottage Cheese Filling

  • 1 pound dry cottage cheese
  • 1 egg, well beaten
  • 1/4 - 1/2 cup sugar
  • Few drops vanilla


  1. Mix flour, sugar, and salt
  2. Combine eggs and milk and add gradually to the flour mixture beating to a thin smooth batter
  3. Spoon 3 tablespoons batter on a hot 6 - 7" skillet, tilting pan so batter is distributed to edge
  4. Brown lightly on both sides and stack on warm plate
  5. Spread with cottage cheese filling
  6. Roll up
  7. Place in buttered dish and sprinkle with powdered sugar
  8. Heat thoroughly in a 300 degree oven
  9. Serve with sour cream and preserves

My Mother made these when we were young and I loved them. She has now passed and I never had the reciepe. Thank you so much for sharing this treasure from my past.
