Orange Pudding Cake


  • 1 cup sugar, divided
  • 2 tablepsoons butter
  • 1½ tablepsoons grated
  • orange rind
  • 4 eggs, separated
  • ¼ cup flour
  • 1 ¼ cups milk
  • ½ cup orange juice


  1. Beat together ½ cup sugar, butter and orange rind until fluffy.
  2. Beat in the egg yolks one at a time.
  3. Add the flour alternately with the milk and orange juice.
  4. Beat the egg whites until thick; beat in remaining sugar and continue to beat until stiff.
  5. Fold into yolk mixture.
  6. Spoon into a buttered 1½-quart baking dish. Bake at 350° for 50-60 minutes, or until set.
  7. Serve warm or cold.
